12 vegetable marrows flowers
100 g flour
1/2 glass of dry white wine
oil, salt, pepper
a pot mix the flour with two spoonfuls of oil,
the white wine, the yolk, salt and pepper. Add
luke warm water as necessary to obtain an homogeneous
but not dense batter. Leave alone for an hour.
In the meanwhile wash the flowers, eliminate the
pistil and the stems.
Beat the white of the egg untill stiffs and put
it slowly into the batter. Put also the flowers
in the batter, dry and fry them in a large pot
with hot enough oil.
With a steel sieve fetch the fried flowers out
of the batter, dry them on kitchen paper, put
some salt over them and serve immediately.
